I love to cook only when I am in the mood, so imagine the pickle I was in when I moved out of my parents’ house and began the journey as a nostalgic millennial trying to figure out adulthood!

I started surfing the internet for easy recipes that could accommodate my 9-5 job and my bumpy relationship with the kitchen. All I found were time-consuming recipes or fast recipes with ingredients that you could only buy at a super fancy supermarket.

So here we are. Join me on this crazy journey where I share my food hacks that include beloved, affordable Egyptian ingredients, and I promise you we will only stay a maximum of 45 to 60 minutes in the kitchen — and that includes washing the dishes.

Recipe: Easy Sausage and Potato (Quick Weeknight Dinner)

Prep time: 10 minutes
Cook time: 25 minutes
Total time: 35 minutes
Serves: 2 to 3

Ingredients

  • 0.5 kilos of Egyptian-style beef sausages, or as you please
  • 3 big potatoes
  • 1 big red onion
  • 1 red or yellow bell pepper (optional)
  • 2 green bell peppers
  • 3 tablespoons tomato paste
  • Salt and pepper to taste
  • Chilli paprika (optional)
  • 1 teaspoon baharat (Egyptian 11-spice blend)
  • Ghee for cooking

Kitchen Equipment

  • A wok or deep pan
  • Knife
  • Cutting board
  • Spatula

Prep (10 minutes)

  1. Chop the potatoes into equal-sized cubes.
  2. Chop the bell peppers into small cubes or julienne strips.
  3. Cut the sausages into equal pieces. You can microwave them on defrost mode to make this easier.
  4. Chop the onion into squares.

Pro Tip: Chop the onions last to prevent tearing up while prepping the rest of your ingredients. No need for drama.

How to Cook Sausage and Potato (Step by Step)

  1. Heat your wok over medium-high heat and add your ghee.
  2. Sauté the onions until they change colour.
  3. Add the peppers and potatoes. Keep stirring until everything changes colour.
  4. While the vegetables cook, boil water in a kettle. You will need it soon.
  5. Add the sausages and stir with the vegetables until the sausages turn grey.
  6. Pour in the boiled water, then add three tablespoons of tomato paste and your baharat spice blend.
  7. Turn the heat to medium, cover the pan, and tilt the lid slightly.
  8. Check every 5 to 10 minutes. The dish will be ready in about 15 minutes.

While You Wait

You have two options here. You can either wash the tools you used, or you can make white rice.

White rice is simple: use a 1:1 ratio of water to rice — one cup of rice to one cup of boiling water in a pot on medium heat. Add salt and black pepper and you are done.

Serve the sausage and potato over rice and you have a full, affordable meal ready in under 35 minutes.

I cannot tell you the number of times this recipe saved me from ordering in and wasting money on unhealthy food.
